Zucchini Bread

Ingredients
  

  • 3 eggs
  • 1 cup vegetable oil
  • 1 ½ cup granulated sugar
  • 3 tsp vanilla extract
  • 3 cups unbleached all purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp salt
  • 1 tbsp cinnamon
  • 2 cups grated zucchini

Method
 

  1. Beat the eggs, oil, sugar, and vanilla.
  2. In a separate bowl, sift the flour, baking soda, baking powder, salt, and cinnamon.
  3. Add the dry ingredients to the wet and beat well.
  4. Stir in zucchini until well combined.
  5. Bake for 40 minutes at 350° or until toothpick inserted in center of bread comes out clean.
  6. Cool for at least 10 minutes before serving.
