You know how everyone has a quirk that no one else seems to understand? Well, mine is that I absolutely hate bananas — like, I can’t even be near one because the smell makes me want to puke — but… I LOVE banana bread. Weird, I know.
Flour Bakery + Cafe in Boston has the best banana bread so you can imagine how happy I was when I found their recipe! I modified it a bit so it’s fluffier and not as sweet. Enjoy, and let me know what you think in the comments below! 🙂
Flour Bakery’s Banana Bread
Ingredients
- 3 eggs
- ½ cup oil
- 2 tbsp plain Greek yogurt
- 1 tsp vanilla extract
- ¾ cup sugar
- 1 ¾ cup unbleached all purpose flour
- 1 tsp baking soda
- ½ tsp salt
- ½ tsp cinnamon
- 3 bananas ripe and mashed
Instructions
- Mix the eggs, oil, Greek yogurt, and vanilla extract until smooth and fluffy.
- Add in the sugar and mix well.
- Sift the flour, baking soda, salt, and cinnamon in separate bowl, and then add it to the liquid ingredients.
- Mix in the bananas.
- Bake at 350° for 40-60 minutes (depending on your oven and pan) until toothpick comes out clean.
