One of my favorite and most versatile meals to cook is a ground turkey, sweet potato, and broccoli hash. This simple and healthy meal is full of nutrients and so delicious! Mornings are always a scramble (no pun intended) so I love making this hash at night and bottling up portions into mason jars to eat throughout the week. You can make it in one pan so it’s perfect for meal prepping! All I need to do is pop each portion in a microwave and voila! Breakfast is served. It’s so good that sometimes I’ve even eaten it for breakfast, lunch, and dinner.
I’m not a big meat eater, but I love ground turkey because there are so many different dishes you can create with it. For this dish, I mixed it with sweet potato and broccoli, two of my favorite vegetables. I also occasionally add in Brussels sprouts, which is one of the quintessential fall vegetables. This meal is basically fall in a jar!
I don’t follow a recipe and just eyeball it, but I usually use 1 pound of ground turkey, 1-2 crowns of broccoli, and 2-3 sweet potatoes (depending on the size). I chop up the broccoli into florets and the sweet potatoes into small chunks (using my handy dandy vegetable chopper — seriously one of the best purchase I’ve made!).
First, I sauté the sweet potato since it takes a little longer to cook. I use olive oil but avocado oil is great too! It takes about 5-7 minutes for the sweet potatoes to cook — they should be soft and slightly brown, but not burnt. Once they are ready, I add in the ground turkey, using my spatula to break it up. You want the ground turkey pieces to be really small here for the full flavor to burst. Once the turkey is halfway cooked, I add in the broccoli and sauté everything together.
For seasoning, I use salt, pepper, garlic powder, and (lots of) basil — all to taste! You can either add all the seasoning in together at the end when the dish is almost ready, or add salt and pepper along the way as you mix in more ingredients, taste tasting at each step. I usually reserve the garlic powder and basil for the very end.
And that’s it! So easy, so quick, and so hearty. And since it’s only one pan, clean up is a piece of cake too.
