As coronavirus continues to evolve globally, it’s more important than ever to practice social distancing and flatten the curve. Since New York is basically shut down, I’ve been spending all my days inside, doing lots of experimenting in the kitchen!
Today I’m sharing one of my go-to recipes: ground turkey stuffed peppers. I can’t believe I haven’t made stuffed peppers until now. They are so easy, healthy, and above all, delicious! Mine have a little twist as they’re made with ground turkey instead of ground beef, but they’re just as good. Try it for yourself and let me know what you think!
Ground Turkey Stuffed Peppers
Ingredients
- 6 bell peppers
- 1 cup jasmine rice
- 1 lb ground turkey
- 1 onion
- 1 tomato
- cup chopped kale
- olive oil
- salt
- pepper
- garlic powder
- Italian seasoning
- shredded pepperjack cheese
Instructions
- Preheat oven to 350°. Cook rice and set aside. For an enhanced flavor, cook rice with chicken stock.
- Cut off the tops of the peppers, cut peppers in half, and remove the seeds.
- Dice the onions and tomatoes and set aside.
- Sauté the ground turkey with olive oil, salt, pepper, garlic powder, and Italian seasoning.
- Add in the onions, tomato, and kale, and sauté until vegetables are cooked. Mix in the rice. Season to taste.
- Stuff the peppers and top with shredded pepperjack cheese.
- Bake for 30 minutes at 350°.
